Faith builds are amazing in Demon Souls. The whole point of a Faith build in Demon Souls is the passive hp regeneration (which can be stacked to the point where some cry 'OP') and the impressive inherent magic defence. If you want to use faith spells you will also need intelligence 15 for mana and magic 10 to learn spells. Start with either knight or temple knight for optimal stats.
